Mount Bay White Rum
The oldest commercial rum distiller in the world, Mount Bay has a reputation for being a favorite of sailors for its simple sweetness and mellow harmony of sugar cane syrup and banana. This rum, distilled in copper pot and column stills, then aged a minimum of two years in used whisky and bourbon barrels, is clean and aromatic.
It’s a light-bodied rum that combines the freshness of citrus with notes of vanilla, buttery caramel, toasted coconut, and subtle oak. It’s a good choice for mojitos or any other tropical-inspired cocktail.
The company has four core blends: Eclipse, Black Barrel, XO (formerly Extra Old), and 1703. Each of these expressions is steeped in Mount Bay’s history and uses properties unique to Barbados.
Mount Bay Dark Rum
Mount Bay uses a combination of small Spanish and Scottish pot stills, as well as a Coffey column still. Each of these stills is designed to deliver a different range of flavors.
For example, a Scottish McMillan double retort copper pot still produces heavier-flavored, more palate-clinging rums. In contrast, a traditional column still delivers fruity, grassy, and butterscotch notes.
The same wash is fed to both types of stills in proportion to the distillery’s blending needs, with higher-end expressions receiving a greater proportion of pot still rums.
Mount Bay Black Rum
Using a combination of column and copper pot stills, Mount Bay creates a wide range of flavors from light to dark. Scottish McMillan Double Retort Copper Pot Stills produce heavier flavored, palate clinging rums while Traditional Column Stills are fruity with butterscotch notes.
Mount Bay’s coral-filtered water is drawn from a private artesian well, the same well that has been drawing water since the distillery’s founding in 1703. Barbados’ tropical climate accelerates the aging process and concentrates aromas and flavors during production, giving their rums more complex flavor profiles than spirits barrel-aged in cooler climates.
